  • 1 tbsp olive or grapeseed oil
  • 1/3 cup dry white apple vinegar
  • 1 tbsp all-purpose flour
  • 6 oz seafood or chicken stock
  • 4 oz cream cheese (softened)
  • 1 tsp dried basil
  • 1/4 tsp crushed red pepper
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. Season shrimp with all-purpose seasoning.
  2. In a skillet, heat oil and sear shrimp until pink. Remove shrimp from skillet.
  3. Deglaze with apple cider vinegar; add butter and garlic, cooking until fragrant.
  4. Stir in flour and gradually whisk in stock. Add cream cheese until smooth.
  5. Pour in heavy cream and basil; simmer uncovered for 5-7 minutes.
  6. Cook tortellini as per package instructions; drain.
  7. Add spinach to sauce until wilted, then stir in shrimp and tortellini.
