  • 5 cloves garlic
  • 3 mixed peppers
  • 500g sweet potatoes
  • 6 salad tomatoes
  • 500g large carrots
  • 100ml single cream
  • 800ml vegetable stock
  • Fresh herbs for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. On a large baking sheet, toss together sliced onions, garlic, peppers, sweet potatoes, tomatoes, and carrots with olive oil, salt, pepper, sage, and Italian herbs.
  3. Roast for 30–35 minutes until tender and slightly charred.
  4. Allow to cool slightly before blending the roasted vegetables with vegetable stock until smooth.
  5. Return to a pot over medium heat; stir in cream and adjust seasoning as needed.
  6. Serve hot, garnished with fresh parsley.
