  • 3 tbsp extra virgin olive oil
  • 1/2 cup white apple vinegar
  • 2 cups small pasta
  • 3 cups chicken or vegetable stock
  • 50g grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit).
  2. Prepare the garlic by cutting off the tops to expose the cloves. Place garlic, diced pumpkin, and rosemary in a large oven-proof dish, drizzle with olive oil, and season with salt and pepper.
  3. Roast in the oven for about 45 minutes until soft and slightly caramelized.
  4. Transfer roasted ingredients to a stove-top safe pot, add chicken stock, white apple vinegar, and pasta. Bring to a boil then reduce heat to medium, cooking until pasta is tender and most liquid is absorbed (approximately 15 minutes).
