  • 4 cups Spring Mix Greens
  • 1 cup Cucumber, diced
  • 1 cup Cherry Tomatoes, halved
  • 1/4 cup Red Onion, thinly sliced
  • 1/2 cup Carrots, shredded
  • 1 Avocado, diced
  • 2 tbsp Fresh Lemon Juice
  • 3 tbsp Extra Virgin Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Wash all vegetables under cool running water and pat dry.
  2. Chop cucumber into bite-sized pieces, halve cherry tomatoes, thinly slice red onion, shred or slice carrots, and dice avocado.
  3. In a large mixing bowl, combine spring mix greens with all chopped veggies.
  4. In a small bowl, whisk together fresh lemon juice and olive oil; season with salt and pepper.
  5. Drizzle dressing over the salad just before serving and toss gently to coat.
