  • Juice of 1 lime

Instructions

  2. Add crushed garlic and grated ginger; cook for another minute.
  3. Pour in coconut milk, lemongrass pieces, and stock; bring to a simmer for 5 minutes.
  4. Add noodles and cook according to package instructions (about 4 minutes). Stir in sliced pak choi until bright green.
  5. Serve in bowls topped with lime juice and fresh cilantro.
