Ingredients
- 2 cups whole dried Sichuan red chilies (or 1.5 cups/360g chili flakes)
- 3 cloves garlic (finely minced)
- 2 1/2 cups vegetable oil
- 4 slices ginger
- 4 star anise
- 1 small onion (quartered)
Instructions
- Grind dried red chilies in a food processor until they become flakes and transfer to a heat-proof bowl. Add minced garlic and salt.
- Heat vegetable oil in a pot on low-medium until it reaches around 250°F.
- Add ginger and onion into the hot oil; simmer for 20-25 minutes.
- Remove aromatics, then carefully pour hot oil over the chili flakes and stir.
- Let cool completely before transferring to a sterilized jar for storage.
