Ingredients

  • 2 cups whole dried Sichuan red chilies (or 1.5 cups/360g chili flakes)
  • 3 cloves garlic (finely minced)
  • 2 1/2 cups vegetable oil
  • 4 slices ginger
  • 4 star anise
  • 1 small onion (quartered)

Instructions

  1. Grind dried red chilies in a food processor until they become flakes and transfer to a heat-proof bowl. Add minced garlic and salt.
  2. Heat vegetable oil in a pot on low-medium until it reaches around 250°F.
  3. Add ginger and onion into the hot oil; simmer for 20-25 minutes.
  4. Remove aromatics, then carefully pour hot oil over the chili flakes and stir.
  5. Let cool completely before transferring to a sterilized jar for storage.
