  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350℉ and line a cookie sheet with parchment paper.
  2. In one bowl, mix flour, pumpkin spice, and salt. In another bowl, beat cream cheese and butter until creamy; gradually add sugars, egg yolk, and vanilla.
  3. Combine dry ingredients into wet mixture until just mixed.
  4. Shape dough into balls, roll in coarse sugar, and place on baking sheet.
  5. For the filling: whisk together egg, brown sugar, salt, spices, milk, pumpkin puree, and vanilla until smooth.
  6. Press down center of each cookie ball and fill with the mixture.
  7. Bake for about 15 minutes or until golden brown.
