Instructions
- Preheat oven to 350℉ and line a cookie sheet with parchment paper.
- In one bowl, mix flour, pumpkin spice, and salt. In another bowl, beat cream cheese and butter until creamy; gradually add sugars, egg yolk, and vanilla.
- Combine dry ingredients into wet mixture until just mixed.
- Shape dough into balls, roll in coarse sugar, and place on baking sheet.
- For the filling: whisk together egg, brown sugar, salt, spices, milk, pumpkin puree, and vanilla until smooth.
- Press down center of each cookie ball and fill with the mixture.
- Bake for about 15 minutes or until golden brown.
