Ingredients

Scale
  • 3 pounds boneless skinless chicken thighs or breasts
  • 2 tsp olive oil
  • 1 can chipotle peppers in adobo sauce (7 oz)
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion (quartered)
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. In a mixing bowl, combine chipotle peppers with adobo sauce, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, smoked paprika, salt, and pepper. Mix well.
  2. Place chicken in a large bowl or zip-top bag; pour marinade over the chicken ensuring all pieces are coated. Marinate for at least 30 minutes (or up to overnight).
  3. Heat olive oil in a cast iron skillet over medium-high heat. Add marinated chicken pieces and cook for about 5–7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  4. Remove from heat and let rest for a few minutes before slicing. Serve warm with desired sides.
