  • 2 small carrots (peeled and diced)
  • 1 medium potato (peeled and diced)
  • 2 cups vegetable broth
  • 2 (14 oz) cans pinto beans (drained and rinsed)
  • Salt and pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced onion and sauté for about 4-5 minutes until translucent.
  2. Stir in fire-roasted tomatoes, minced garlic, diced carrots, diced potato, and spices. Cook for an additional 1-2 minutes until fragrant.
  3. Pour in vegetable broth and add optional bay leaves. Bring to a boil, then reduce heat and let simmer with the lid on for about 10-15 minutes.
  4. Add drained pinto beans to the pot and cook for another 10 minutes or until vegetables are tender.
  5. For a creamier texture, blend half of the soup using an immersion blender or regular blender.
  6. Return blended soup to the pot, stir well, season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
