Ingredients

Scale
  • 1 ½ pounds boneless skinless chicken breasts or thighs
  • ½ cup low sodium soy sauce
  • ½ cup pineapple juice
  • 2 tablespoons packed brown sugar
  • 4 cups broccoli florets
  • 1 small red onion
  • 1 red bell pepper
  • 20 ounces canned pineapple chunks
  • Cooked rice (for serving)

Instructions

  1. In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, honey, rice vinegar, sesame oil, ginger, garlic, and cornstarch to make the teriyaki sauce.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Season chicken with salt and pepper and cook until browned and cooked through (7-10 minutes). Transfer to a plate.
  3. In the same skillet, add remaining oil and sauté chopped onion, bell pepper, and broccoli for about 4 minutes until crisp-tender.
  4. Return chicken to the skillet along with pineapple chunks and pour in the teriyaki sauce. Stir continuously until sauce thickens slightly (1-2 minutes).
  5. Serve over cooked rice or in lettuce wraps.
