Instructions

  1. Heat olive oil in a large skillet over medium heat. Cook the chicken until golden brown and cooked through; set aside.
  2. In the same skillet, sauté onion, garlic, and bell pepper for about 3–4 minutes until softened.
  3. Add pineapple chunks and cook for an additional 2 minutes.
  4. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
  5. Lower the heat, cover, and simmer for 18–20 minutes until rice is tender.
  6. Return the chicken to the skillet and mix well; heat through for another minute.
