Ingredients

- 1/2 teaspoon freshly ground black pepper
- 1 cup fresh cilantro leaves
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 whole jalapeño chiles
- 1 cup jasmine rice
- 1 tablespoon butter/oil
- 1/4 cup onion, diced
- 2–3 garlic cloves, minced
- 1 teaspoon turmeric
- 1/4 teaspoon EACH cumin, onion powder, salt, pepper
- 2 cups chicken stock
- 1 cup frozen peas
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Marinate chicken in garlic, lime juice, oil, cumin, paprika, salt, and pepper for at least 1 hour or overnight.
- Preheat grill to medium-high or oven to 450°F.
- Grill chicken for 5-7 minutes per side until cooked through or bake for about 30 minutes.
- Prepare yellow rice by sautéing onion and garlic in butter, then adding rinsed rice and spices before cooking in chicken stock.
