Ingredients
- 2 lbs chicken thighs (skin-on, bone-in)
- 3 red bell peppers
- 1 jalapeño pepper
- 3 garlic cloves
- 1 red onion
- 4 tablespoons olive oil
- 4 tablespoons lemon juice
- 3 tablespoons smoked paprika
- 2 teaspoons dried oregano
- Salt and black pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- In a mixing bowl, combine the sliced bell peppers, jalapeño, garlic cloves, red onion, olive oil, lemon juice, smoked paprika, oregano, salt, and pepper. Whisk until smooth for the marinade.
- Place the chicken thighs in a large zip-lock bag or dish and pour half of the marinade over them. Seal and refrigerate for at least 30 minutes or overnight for maximum flavor.
- Preheat your grill to medium-high heat or oven to 400°F (200°C).
- Remove chicken from the marinade and discard the used marinade. Grill for about 6-8 minutes per side or bake for approximately 25 minutes until the internal temperature reaches 165°F (74°C).
- Optionally, melt butter in a pan over medium heat and add reserved marinade with chicken stock to make a sauce.
