Ingredients
- 8 oz elbow macaroni or penne

- 1/2 cup mayonnaise

Instructions
- Cook pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a separate pan, melt butter over medium heat. Add corn and jalapeño (if using) and sauté for about 5 minutes until tender.
- In a large mixing bowl, combine cooked pasta with sautéed corn mixture, cilantro, cotija cheese, mayonnaise, lime juice, chili powder, smoked paprika, salt, and black pepper. Mix well.
