Ingredients

Scale
  • 15.25 ounces vanilla cake mix
  • 3 eggs (room temperature)
  • 1 cup milk (or vanilla almond milk)
  • ½ cup vegetable oil
  • 1 tablespoon orange zest
  • 3.4 ounces orange JELLO
  • 1¼ cup boiling water
  • ⅓ cup fresh squeezed orange juice
  • 15 ounces can of mandarin oranges (do not drain)
  • 3.5 ounces vanilla instant pudding mix
  • 8 ounces Cool Whip

Instructions

  1. Preheat oven and prepare the cake mix according to package directions using a 9 x 13 inch baking pan.
  2. Bake until golden brown and let cool for about 10 minutes.
  3. Poke holes in the top of the cooled cake using a skewer.
  4. Prepare the JELLO mixture by dissolving in boiling water and mixing in fresh orange juice.
  5. Pour the JELLO over the cake, allowing it to seep into the holes, and refrigerate for at least 3 hours.
  6. For frosting, combine mandarin oranges with vanilla pudding mix and fold in Cool Whip.
  7. Spread frosting on cooled cake and refrigerate for an additional 30 minutes before serving.
