  • 1 tsp baking soda

  • 2 large eggs

  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder

  • For the honey drizzle: 1/4 cup honey and 1 tbsp fresh orange juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch cake tin.
  2. In a bowl, mix together the flour, baking powder, cardamom, and salt.
  3. In another bowl, cream together softened butter and brown sugar until fluffy. Add eggs, vanilla, orange zest, and juice; mix well.
  4. Fold in chopped dates mixed with baking soda and boiling water.
  5. Gradually combine the dry ingredients with the wet mixture until just mixed.
  6. Pour batter into the prepared tin and bake for about 40–45 minutes or until a toothpick comes out clean.
  7. For the honey drizzle, warm honey with orange juice in a saucepan until blended.
  8. Once cooled slightly, drizzle honey mixture over the cake before serving.
