Ingredients
- 150 g vegan cookies
- 50 g vegan butter
- 2 ripe kiwis (for filling)
- 200 g plant-based whipped cream
- 400 g soy quark
- 50 g sugar
- Zest of 1/3 organic lemon
- 1 tsp vanilla extract
- 80 ml water
- 1.5 tsp agar-agar (pure powder)
Instructions
- Prepare the cookie crust: Crush vegan cookies and mix with melted vegan butter. Press into the base of a springform pan.
- Make the filling: Combine soy quark, plant-based whipped cream, sugar, lemon zest, and vanilla in a bowl until smooth. Dissolve agar-agar in boiling water, then mix into the filling.
- Assemble: Pour the filling over the crust and smooth out with a spatula. Refrigerate for at least 4 hours.
- Prepare kiwi topping: Blend sliced kiwis with water, lemon juice, sugar, and agar-agar. Bring to a boil and allow to cool.
