  • 1 tablespoon cinnamon (for swirl)
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, combine shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well mixed.
  3. In another bowl, whisk together all-purpose flour, sugar, baking powder, salt, ground cinnamon, nutmeg, and cloves.
  4. Gradually add the dry mixture to the wet ingredients and stir gently until just combined.
  5. Mix together additional sugar and cinnamon for the swirl. Pour half of the batter into the prepared pan and sprinkle half of the cinnamon mixture on top. Add remaining batter and finish with the rest of the swirl mixture.
  6. Use a knife to create swirls in the batter before baking for about 60-65 minutes or until a toothpick inserted comes out clean.
  7. Allow cooling for 10-15 minutes before removing from pan.
