Ingredients
- 115 g unsalted butter
- 135 g light brown sugar
- 55 g granulated sugar
- 1 medium egg
- 1 tsp vanilla extract
- 275 g plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 tbsp cornflour
- 100 g milk chocolate chips
- 100–300 g mini eggs (for garnish)
Instructions
- Preheat your oven to 190ºC (170ºC for fan ovens) and line a 9×9 inch baking tin with parchment paper.
- In a mixing bowl, combine melted butter with light brown sugar and granulated sugar until smooth.
- Add the egg and vanilla extract; mix well to incorporate.
- Sift in plain flour, cornflour, bicarbonate of soda, and salt. Mix until a dough forms.
- Fold in chocolate chips and most of the mini eggs into the dough.
- Press the mixture into the lined baking tin and top with remaining mini eggs.
- Bake for 18-22 minutes, until the top is dry but the center remains soft.
- Cool in the tin before slicing into bars.
