  • 2 cloves of garlic
  • 1 jalapeño pepper
  • 3 tablespoons tomato paste
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1/2 teaspoon oregano
  • Fresh coriander
  • Juice of half a lime
  • Salt and black pepper
  • Bell peppers (red, green, yellow)
  • 1 white onion

Instructions

  1. Prepare the marinade by blending garlic, jalapeño, tomato paste, spices, coriander, lime juice, salt, and pepper in a mini food processor until smooth.
  2. Cut chicken thighs into bite-sized pieces and coat them in the marinade. Refrigerate for at least 4 hours or overnight for best results.
  3. Soak wooden skewers in warm water for 30 minutes (if using).
  4. Thread marinated chicken onto skewers alternately with pieces of bell peppers and onion.
  5. Spray skewers lightly with cooking oil spray to prevent sticking.
  6. Cook on a preheated grill for about 15 minutes or bake in the oven at 220°C (425°F) for 25–30 minutes until cooked through.
