  • 2 large eggs
  • 3/4 cup breadcrumbs
  • 2 tablespoons ketchup
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (or dried parsley; plus more for garnishing)
  • Glaze: 3/4 cup ketchup
  • 1/4 cup brown sugar (packed)
  • 2 tablespoons apple cider vinegar

Instructions

  1. Preheat oven to 350°F.
  2. Sauté chopped onions in melted butter until softened; add minced garlic and cook briefly.
  3. In a mixing bowl, combine sautéed onions, garlic, ground meat, milk, eggs, breadcrumbs, ketchup, Italian seasoning, salt, pepper, and parsley. Mix until just combined.
  4. Shape mixture into a loaf in a loaf pan.
  5. Bake for 40 minutes; apply glaze made from ketchup, brown sugar, and apple cider vinegar on top.
  6. Bake an additional 20–30 minutes until cooked through.
