  • 5 large eggs (separated)
  • 1 cup granulated sugar
  • 1 ½ tsp vanilla extract
  • ¼ cup whole milk
  • 1 cup all-purpose flour
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • ½ cup heavy whipping cream (for soaking)
  • Fresh mango chunks and puree

Instructions

  1. Preheat the oven to 350°F. Grease only the bottom of a 9×13 inch baking dish.
  2. Whisk together flour, salt, and baking powder in a bowl; set aside.
  3. In a large mixing bowl, beat egg yolks with ¾ cup sugar and vanilla until thick and pale. Stir in milk.
  4. Fold the dry ingredients into the egg yolk mixture until combined.
  5. Beat egg whites until soft peaks form; gradually add remaining sugar until stiff peaks form.
  6. Gently fold egg whites into the batter without over-mixing.
  7. Pour batter into prepared dish and bake for about 25 minutes or until a toothpick comes out clean.
  8. Cool cake completely; then poke holes in it and soak with a mixture of evaporated milk, sweetened condensed milk, and heavy cream.
  9. Refrigerate for at least 4 hours or overnight.
  10. Whip heavy cream with powdered sugar and vanilla until stiff peaks form; fold in mango puree.
  11. Spread whipped cream over the cake and garnish with fresh mango.
