  • 2 tablespoons lime juice (about 1 lime)
  • Pinch of salt
  • 1 cup heavy whipping cream
  • ¼ cup sweetened condensed milk
  • 2 tablespoons granulated sugar
  • ¼ cup boiling water
  • 1 pack unflavored gelatin (approx. 7 grams or 2½ teaspoons)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 350°F.
  2. Blend Biscoff cookies into fine crumbs and mix with melted butter and salt. Press into an 8-inch pie plate and bake for 10-12 minutes until golden brown. Let cool.
  3. Puree peeled mangoes and combine with lime juice. Whip heavy cream with sugar until firm peaks form.
  4. Dissolve gelatin in boiling water, then mix with mango puree. Gently fold in whipped cream and sweetened condensed milk.
  5. Pour custard into cooled crust, cover, and chill for at least 2 hours before serving.
