  • 1 1/4 cup All-Purpose Flour
  • 3/4 cup Cake Flour
  • 1/2 cup Cold Unsalted Butter (cubed)
  • 1/2 cup Light Brown Sugar (packed)
  • 1/4 cup Granulated Sugar
  • 1 Large Egg
  • 1 Egg Yolk
  • 2 cups Milk Chocolate Chips
  • 1 tsp. Corn Starch
  • 1/2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, mix all-purpose flour, cake flour, baking soda, baking powder, corn starch, and salt.
  3. In a stand mixer, cream cold butter with light brown sugar and granulated sugar until fluffy. Add egg and egg yolk (and vanilla if desired).
  4. Gradually mix in dry ingredients until just combined. Fold in chocolate chips.
  5. Portion dough into six balls (about 5.7 oz each) without flattening them on a lined baking sheet.
  6. Bake for 10-12 minutes until tops are golden; let cool on the sheet for at least 15 minutes before transferring.
