  • 1 pound boneless beef chops (sliced into thin strips)
  • 2 tbsp olive oil
  • 8 ounces mushrooms (sliced)
  • 1 bag coleslaw mix
  • 1/3 cup green onions
  • 1/2 cup soy sauce
  • 2 tbsp Swerve brown sugar substitute
  • 1/4 cup rice vinegar
  • 1 tsp sesame oil
  • 4 tsp minced garlic
  • 2 tsp ginger paste
  • 2 large eggs (lightly beaten)
  • 2 tbsp fresh parsley (finely chopped)

Instructions

  1. Prepare the sauce by mixing all sauce ingredients in a bowl.
  2. Marinate the beef strips in half of the sauce using a Ziploc bag for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat and add marinated beef and mushrooms; cook until browned.
  4. Move cooked beef and mushrooms to one side of the skillet, reduce heat, and scramble the beaten eggs until set.
  5. Mix in coleslaw and pour the remaining sauce over; toss to combine.
  6. Serve hot, garnished with green onions.
