  • 2 stalks celery
  • 5 cloves garlic
  • 1 tsp Italian seasoning
  • 1 tbsp chicken base
  • 5 cups chicken broth
  • 1 can evaporated milk (12 oz)
  • 2 cups cooked chicken (shredded)
  • 1 lb shelf-stable gnocchi
  • Fresh spinach (3-4 oz)

Instructions

  1. In a large pot over medium heat, warm 2 tbsp of reserved sun-dried tomato oil. Add diced onion, carrots, and celery. Sauté until softened.
  2. Stir in chopped sun-dried tomatoes, minced garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper. Cook until fragrant.
  3. Incorporate tomato paste and flour; stir for one minute.
  4. Pour in chicken broth while scraping the bottom of the pot to release any browned bits.
  5. Bring to a simmer; cover partially and cook on low heat for about 15 minutes.
  6. Add shredded chicken, spinach, evaporated milk, and gnocchi. Heat through for another 5–10 minutes.
  7. Serve immediately with grated parmesan cheese.
