- 1 cup All-Purpose Flour (unbleached)
- ½ tsp Baking Soda
- ½ tsp Salt
- ¾ cup Brown Sugar, packed
- ¼ cup Granulated Sugar
- ½ cup (1 stick) Unsalted Butter, softened
- 1 Large Egg
- 1 tsp Vanilla Extract
- ¾ cup Raisins
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, whisk together oats, flour, baking soda, and salt. Set aside.
- In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the raisins.
- Press the dough evenly into the prepared baking pan.
- Bake for 22–25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Let cool completely before cutting into bars.
