  • 2 cups cauliflower rice
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro, chopped

Instructions

  2. In a large skillet over medium heat, brown the ground meat until fully cooked.
  3. Add chopped onion and bell peppers; sauté until tender (about 5 minutes).

  5. Mix in cauliflower rice until well combined.
  6. In a greased baking dish, layer half of the meat mixture and half of the cheese; repeat layers.
