Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ½ cup fresh lime juice
  • Zest of 2 limes
  • 1 cup heavy whipping cream
  • 1 tsp agar-agar powder

Instructions

  4. Whip heavy cream in a separate bowl until soft peaks form, then gently fold into the cream cheese mixture.
  5. In a saucepan, combine agar-agar powder with water per package instructions; bring to a boil until dissolved. Let it cool slightly, then fold into the cheesecake mixture.
  6. Pour the filling over the cooled crust and smooth the top with a spatula. Cover and refrigerate for at least four hours or overnight before serving.
