- 1/4 cup pure honey
- 3 tbsp hot sauce (adjust to taste)
- 4 cups mixed greens (lettuce, spinach, arugula)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, thinly sliced
- 2 tbsp freshly squeezed lemon juice
Instructions
- Preheat your grill or oven to medium-high heat (375°F/190°C). Season the chicken breasts with salt and pepper.
- In a small bowl, whisk together honey and hot sauce until well combined.
- Grill or bake the seasoned chicken for about 6-8 minutes on each side, brushing generously with the honey-hot sauce mixture until cooked through (internal temperature of 165°F/75°C).
- While the chicken cooks, wash and chop the mixed greens into bite-sized pieces and toss them with sliced cucumbers and cherry tomatoes.
- Once cooked, let the chicken rest for a minute before slicing it into strips and adding it to the salad.
