- 1 ½ cups crushed chocolate cookies (like Oreos, without filling)
- ¼ cup melted unsalted butter
- For the Filling:
- 3 (8 oz) packages cream cheese, softened
- ¾ cup granulated sugar
- ¾ cup sour cream (full-fat)
- 2 teaspoons vanilla extract
- 2 tablespoons unsweetened cocoa powder
- For the Strawberry Swirl:
- 1 cup fresh strawberries, hulled
- 1–2 tablespoons sugar (optional, to taste)
Instructions
- Make the Crust
Combine crushed chocolate cookies with melted butter. Press the mixture firmly into the bottom of a springform pan. Chill in the fridge while you prepare the filling. - Prepare the Strawberry Swirl
Blend fresh strawberries with sugar (if using) into a smooth purée. Strain if you prefer a seedless swirl. Set aside. - Make the Cheesecake Filling
In a large bowl, beat softened cream cheese until smooth. Add sugar, sour cream, vanilla extract, and cocoa powder. Mix until creamy and well combined. - Assemble the Cheesecake
Pour the filling over the crust and smooth the top. Drop spoonfuls of the strawberry purée onto the surface and use a skewer or knife to gently swirl it through the top layer. - Chill to Set
Refrigerate for at least 6 hours, or overnight, until fully set. For a firmer texture, you can also briefly bake the crust at 350°F (175°C) for 8 minutes before adding filling (optional). - Serve & Enjoy
