  • 6 cloves fresh garlic, minced
  • 2 medium onions, thinly sliced
  • 2 ripe tomatoes, diced
  • 1 tsp cumin seeds
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • Pinch of saffron threads (optional)
  • 3 cups chicken broth or water
  • 2 tbsp vegetable oil or ghee

Instructions

  1. Marinate the chicken by mixing with ginger, garlic, cumin seeds, coriander powder, garam masala, salt, and yogurt in a bowl. Let it sit for at least one hour.
  2. Rinse basmati rice under cold water until clear and soak for 30 minutes.
  3. Heat oil or ghee in a large pot over medium heat. Sauté sliced onions until golden brown; set aside half for garnish.
  4. Add diced tomatoes to the pot with remaining onions and cook until softened; then add the marinated chicken and cook until browned.
  5. Layer soaked rice evenly over the chicken mixture and pour in broth until covered by half an inch.
  6. Cover tightly with a lid, reduce heat to low, and simmer for about 25 minutes before serving.
