- 1 tbsp coriander powder
- 1 tsp garam masala
- Pinch of saffron threads (optional)
- 3 cups chicken broth or water
- 2 tbsp vegetable oil or ghee
Instructions
- Marinate the chicken by mixing with ginger, garlic, cumin seeds, coriander powder, garam masala, salt, and yogurt in a bowl. Let it sit for at least one hour.
- Rinse basmati rice under cold water until clear and soak for 30 minutes.
- Heat oil or ghee in a large pot over medium heat. Sauté sliced onions until golden brown; set aside half for garnish.
- Add diced tomatoes to the pot with remaining onions and cook until softened; then add the marinated chicken and cook until browned.
- Layer soaked rice evenly over the chicken mixture and pour in broth until covered by half an inch.
- Cover tightly with a lid, reduce heat to low, and simmer for about 25 minutes before serving.
