- 1 ½ cups crushed graham crackers
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- For the Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup sour cream
- ¾ cup granulated sugar
- 2 tablespoons instant coffee granules
- 1 teaspoon vanilla extract
- 1 teaspoon agar-agar powder (or according to package instructions)
- ½ cup water (for dissolving agar-agar)
Instructions
- Prepare the Crust
In a bowl, mix crushed graham crackers, sugar, and melted butter. Press the mixture into the bottom of a springform pan to form an even crust. Chill in the fridge while making the filling. - Dissolve the Agar-Agar
In a small saucepan, combine agar-agar powder with ½ cup water. Bring to a boil, then simmer for 2 minutes until fully dissolved. Set aside. - Make the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Add sour cream, sugar, instant coffee granules, and vanilla extract. Mix until well combined. - Incorporate Agar-Agar
Slowly add the dissolved agar-agar into the cheesecake filling while mixing continuously to avoid clumping. - Assemble the Cheesecake
Pour the filling over the prepared crust. Smooth the top with a spatula. - Chill to Set
Refrigerate for at least 4–6 hours, or overnight, until firm. - Serve and Enjoy!
