Ingredients

Scale
  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Lime zest from 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 2 medium avocados (for salsa)
  • 1 cup cherry tomatoes or 2 Roma tomatoes
  • Fresh corn from 1 ear
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice (for salsa)
  • 1/4 teaspoon ground cumin (for salsa)
  • 1/4 teaspoon salt (for salsa)
  • 1/8 teaspoon pepper (for salsa)
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. Combine olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if using), and pepper in a mixing bowl. Whisk until well blended.
  2. Place the pounded chicken breasts in a zip-top bag or shallow dish. Pour the marinade over the chicken. Seal or cover and let marinate for at least 30 minutes or up to overnight in the refrigerator.
  3. Heat a skillet over medium-high heat. Once hot, add the marinated chicken breasts. Cook for about 5 minutes on each side or until fully cooked through (internal temperature should reach 165°F). Remove from heat and let rest for a few minutes before slicing.
  4. In a mixing bowl, combine chopped avocados, cherry tomatoes (or Roma tomatoes), sweet corn kernels, red onion, red bell pepper, jalapeno pepper, cilantro, minced garlic (or garlic powder), lime juice, ground cumin, salt, and pepper. Gently toss until mixed well.
  5. Slice the cooked Fiesta Lime Chicken. Top with avocado salsa and garnish with fresh parsley before serving.
