Ingredients
- 3 lb sweet potatoes, peeled and sliced thin
- 1/2 cup butter
- 1 1/2 cups heavy cream
- 5 cloves garlic, minced
- 1 tbsp fresh thyme
- Kosher salt and black pepper, to taste
- 1/3 cup grated parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, whisk together heavy cream, cornstarch, minced garlic, thyme, salt, and pepper until smooth.
- Layer half of the sliced sweet potatoes in a baking dish. Pour half of the cream mixture over them.
- Add the remaining sweet potatoes on top and pour the rest of the cream mixture over them.
- Sprinkle grated parmesan cheese on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden and bubbly.
- Garnish with chopped parsley before serving.
