  • 3 lb sweet potatoes, peeled and sliced thin
  • 1/2 cup butter
  • 1 1/2 cups heavy cream
  • 5 cloves garlic, minced
  • 1 tbsp fresh thyme
  • Kosher salt and black pepper, to taste
  • 1/3 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, whisk together heavy cream, cornstarch, minced garlic, thyme, salt, and pepper until smooth.
  3. Layer half of the sliced sweet potatoes in a baking dish. Pour half of the cream mixture over them.
  4. Add the remaining sweet potatoes on top and pour the rest of the cream mixture over them.
  5. Sprinkle grated parmesan cheese on top.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden and bubbly.
  7. Garnish with chopped parsley before serving.
