  • 40 grams Sichuan chili flakes
  • 200 ml rapeseed oil
  • 2 tsp sesame oil
  • 3 cloves garlic
  • 3 tsp Sichuan pepper
  • 2 tsp brown sugar
  • Salt
  • black rice vinegar
  • sweet paprika powder

Instructions

  1. Measure and chop garlic and ginger finely.
  2. In a heavy-bottomed pot, heat rapeseed and sesame oil over medium-low heat until hot but not smoking.
  3. Add garlic, ginger, star anis, Sichuan pepper, black cardamom, bay leaves, and cinnamon; cook for 5-10 minutes until fragrant.
  4. Remove from heat; stir in chili flakes, salt, brown sugar, sweet paprika powder, and black rice vinegar.
  5. Let cool slightly, then strain into a heat-resistant jar to discard solids.
  6. Allow resting at room temperature for at least one hour before using.
