  • 1 egg and 1 tablespoon water for egg wash
  • 3/4 cup powdered sugar and 1-2 tablespoons milk for drizzle

Instructions

  1. Cook blueberries: In a medium saucepan over medium heat, cook blueberries until soft and juices are released (about 9 minutes).
  2. Thicken filling: Stir together sugar, cornstarch, and salt; add to cooked blueberries and stir constantly for 2-3 minutes until thickened. Remove from heat and add lemon juice.
  3. Prepare for baking: Preheat oven to 425°F and line two baking sheets with parchment paper.
  4. Cut circles: Roll out pie crust if needed and use a 3 1/2-inch round cutter to cut out 16 circles.
