Ingredients
- 12 chicken breasts
- 2 medium potatoes
- 1 small sweet potato (optional)
- 2 medium tomatoes
- 1 cucumber
- 1 cup plain yogurt
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp chili flakes
- 1 tsp paprika
- Salt & pepper
- Salt & pepper for the salad
- Splash of olive oil or vinegar (optional)
- 1 tsp dried mint or dill
- 1 garlic clove, minced
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat your oven to 200C (400F).
- Marinate chicken with olive oil, oregano, garlic powder, chili flakes, salt, and pepper. Bake for 20-25 minutes until cooked through.
- Toss potato wedges with olive oil, paprika, salt, and pepper. Roast on a separate tray for 25-30 minutes.
- Mix chopped tomatoes and cucumber in a bowl; season with salt and pepper.
- Prepare yogurt dip by mixing yogurt with dried mint or dill and minced garlic; chill.
- Serve the roasted chicken alongside crispy potatoes and fresh salad; add yogurt dip for dipping.
