  • 2 medium potatoes
  • 1 small sweet potato (optional)
  • 2 medium tomatoes
  • 1 cucumber
  • 1 cup plain yogurt
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1 tsp paprika
  • Salt & pepper
  • Salt & pepper for the salad
  • Splash of olive oil or vinegar (optional)
  • 1 tsp dried mint or dill
  • 1 garlic clove, minced
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 200C (400F).
  2. Marinate chicken with olive oil, oregano, garlic powder, chili flakes, salt, and pepper. Bake for 20-25 minutes until cooked through.
  3. Toss potato wedges with olive oil, paprika, salt, and pepper. Roast on a separate tray for 25-30 minutes.
  4. Mix chopped tomatoes and cucumber in a bowl; season with salt and pepper.
  5. Prepare yogurt dip by mixing yogurt with dried mint or dill and minced garlic; chill.
  6. Serve the roasted chicken alongside crispy potatoes and fresh salad; add yogurt dip for dipping.
