Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes), then add chopped carrots and cook for another 3–4 minutes.
- Stir in minced garlic and crushed red pepper; cook until fragrant (about 1 minute).
- Add crushed tomatoes and chicken stock; bring to a boil. Reduce heat to low and simmer for 20 minutes.
- Stir in heavy cream and cooked orzo; heat through for about 5 minutes. Season with salt and black pepper.
- Remove from heat, stir in torn basil leaves, let sit for a couple of minutes, then serve garnished with chopped parsley.
