  • ½ teaspoon black pepper
  • 8 medium flour or corn tortillas
  • 1 can (10 ounces) enchilada sauce (red or green)
  • 1 ½ cups shredded cheese, cheddar, Monterey Jack, or Mexican blend
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion until translucent; add garlic and cook until fragrant.
  2. Add ground turkey and cook until browned. Stir in black beans, diced tomatoes, green chilies, chili powder, cumin, smoked paprika, salt, and pepper. Cook for an additional 5 minutes.
  3. Preheat oven to 350°F (175°C). Spread enchilada sauce in the bottom of a baking dish. Fill each tortilla with about ¼ cup of the turkey mixture; roll tightly and place seam-side down in the dish.
  4. Pour remaining enchilada sauce over the tortillas and sprinkle generously with shredded cheese.
  5. Cover with foil and bake for 20 minutes; remove foil and bake for another 10 minutes until cheese is bubbly and golden brown.
