  • 6 ounces fresh baby spinach
  • 10 ounces frozen cauliflower rice (cooked according to the directions on the bag)
  • 1 cup sour cream (or plain yogurt)
  • 1 tablespoon butter (room temperature)
  • ½ teaspoon dried basil
  • 2 to 3 tablespoons milk (if needed)
  • 8 ounces shredded Italian blend cheese (or any other shredded cheese that you have/prefer)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat olive oil over medium-high heat and sauté diced onions for about 2 minutes. Add minced garlic and cook for another 20 seconds.
  3. Add ground beef, season with Italian seasoning, paprika, salt, and pepper. Cook until browned.
  4. Stir in fresh spinach until wilted.
  5. In a baking dish, combine cooked cauliflower rice with sour cream and dried basil until creamy.
  6. Mix in the beef mixture and top with shredded cheese.
  7. Bake for 22-25 minutes until bubbly and golden.
