Instructions
- Preheat your oven to 425°F (220°C).
- Wash the Yukon Gold potatoes and cut them into uniform sticks about 1/3-inch wide.
- Soak the potato sticks in cold water for 10 to 15 minutes to remove excess starch. Drain and dry thoroughly.
- In a large mixing bowl, toss the dried fries with olive oil, salt, oregano, dill, black pepper, and garlic powder until coated.
- Line a baking sheet with parchment paper and spread the seasoned fries in a single layer.
- Bake for 15 minutes, flip the fries over, then bake for an additional 6 to 8 minutes until golden brown and crispy.
- Once baked, transfer to a serving plate and top with parsley, red onion, and feta cheese.
- Serve warm with tzatziki sauce or lemon wedges for an extra burst of flavor.
