  • 1 egg yolk (for egg wash)

Instructions

  1. Sear the beef filet in olive oil until browned on all sides. Brush with Dijon mustard and let it rest.
  2. Sauté garlic and thyme in butter, then add chopped mushrooms until moisture evaporates. Cool the mixture.
  3. Lay prosciutto on plastic wrap, spread mushroom mixture on top, place beef in the center, and roll tightly. Chill for 15 minutes.
