  • 1/2 tsp ground cloves
  • 8 ounces cream cheese, softened
  • 3/4 cup heavy whipping cream
  • 6 tbsp powdered sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C). Prepare a 9-inch springform pan.
  2. Mix shortbread crumbs, sugar, cinnamon, and melted butter; press into the pan and bake for 10 minutes.
  3. Beat cream cheese, brown sugar, and flour until smooth; add sour cream, molasses, vanilla, spices, and eggs.
  4. Pour filling into cooled crust; bake in a water bath at 300°F (148°C) for about 80 minutes.
  5. Chill cheesecake for at least 5 hours; whip cream with powdered sugar and spices for the mousse topping.
  6. Spread mousse over cheesecake; chill again before serving.
