- 170 grams cream
- 1/2 cup sugar
- 3/4 cup fresh or canned mango
- 1 tablespoon vegan gelatine powder
- 1/4 cup hot water
- 2 cups graham cracker crumbs
- 75 grams unsalted butter, melted
Instructions
- Prepare the base by crushing graham crackers and mixing with melted butter. Press into an 8-inch springform pan and refrigerate.
- In a mixing bowl, whisk together cream cheese, cream, and sugar until smooth.
- Dissolve vegan gelatine in hot water; mix with mango puree. Combine half with the cream cheese mixture.
- Pour the cream cheese mixture over the crust, then layer with reserved mango mixture.
