  • 1/4 cup milk (dairy or nondairy)

Instructions

  1. Preheat your oven to 425°F (218°C) and prepare a muffin pan with nonstick spray or liners.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, ground ginger, and salt.
  3. In another bowl, combine vegetable oil, granulated sugar, brown sugar, pumpkin puree, eggs, and milk until well mixed.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  5. Fill each muffin liner to the top with batter.
  6. Bake for 5 minutes at 425°F then reduce the temperature to 350°F (177°C) and bake for an additional 16–17 minutes until a toothpick comes out clean.
  7. Cool in the pan for about 5 minutes before enjoying.
