  • 0.5 cup soy sauce (divided)
  • 2 tablespoons brown sugar (divided)
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic (minced)
  • 2 tablespoons cornstarch
  • 1 bell pepper (thinly sliced)
  • 1 small onion (thinly sliced)
  • 1 cup white rice
  • 1 fresh pineapple (diced, with some reserved for garnish)
  • Fresh cilantro and green onions for garnish

Instructions

  1. Marinate chicken in a mixture of soy sauce, rice vinegar, brown sugar, ginger, and garlic for at least 20 minutes.
  2. While marinating, prepare the vegetables by slicing the bell pepper and onion and dicing the pineapple.
  3. Cook rice according to package instructions; optionally substitute half of the water with coconut milk.
  4. Prepare the glaze by whisking remaining soy sauce, rice vinegar, brown sugar, sesame oil, and cornstarch until smooth.
  5. Sear marinated chicken in a heated skillet until golden brown; remove from pan.
  6. Sauté bell pepper and onion in the same skillet before returning chicken and adding glaze to coat.
