  • 1 medium egg
  • 75 ml milk (1.5% fat)
  • 50 ml sparkling water
  • Oil for frying
  • 50 g Kadayif pastry
  • Optional: 20 g butter
  • 100 g pistachio cream
  • 1 tsp tahini
  • 3050 g milk chocolate

Instructions

  1. In a mixing bowl, whisk flour, salt, egg, milk, and sparkling water until well combined. Let the batter rest for 15 minutes.
  2. If using butter, melt it in a pan over medium heat. Add Kadayif strands and cook until golden brown. Stir in pistachio cream and tahini until well mixed.
  3. Heat oil in a non-stick frying pan over medium heat. Pour half the batter into the pan, cooking each side for about 2-3 minutes until golden brown. Repeat with remaining batter.
  4. Fill each pancake with the pistachio mixture and roll tightly. Melt the milk chocolate in a microwave-safe bowl or over a water bath; drizzle over pancakes before serving warm.
