Ingredients
- 60 g flour
- 1 pinch salt
- 1 medium egg
- 75 ml milk (1.5% fat)
- 50 ml sparkling water
- Oil for frying
- 50 g Kadayif pastry
- Optional: 20 g butter
- 100 g pistachio cream
- 1 tsp tahini
- 30 – 50 g milk chocolate
Instructions
- In a mixing bowl, whisk flour, salt, egg, milk, and sparkling water until well combined. Let the batter rest for 15 minutes.
- If using butter, melt it in a pan over medium heat. Add Kadayif strands and cook until golden brown. Stir in pistachio cream and tahini until well mixed.
- Heat oil in a non-stick frying pan over medium heat. Pour half the batter into the pan, cooking each side for about 2-3 minutes until golden brown. Repeat with remaining batter.
- Fill each pancake with the pistachio mixture and roll tightly. Melt the milk chocolate in a microwave-safe bowl or over a water bath; drizzle over pancakes before serving warm.
