  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté chopped onion and minced garlic in vegetable oil until soft.
  3. Stir in shredded chicken along with cumin, chili powder, salt, and pepper; cook for another few minutes.
  4. Pour a little enchilada sauce into the bottom of a baking dish to prevent sticking.
  5. Fill each tortilla with the chicken mixture and sprinkle with cheese; roll tightly and place seam side down in the dish.
