  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)

Instructions

  1. Make the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper until smooth. Chill if desired.
  2. Boil water in a large pot. Add shrimp and cook for 2-3 minutes until pink.
  3. Prepare an ice water bath while shrimp cooks. Transfer cooked shrimp to the bath for 3 minutes to cool before draining.
  4. Chop cooled shrimp into bite-sized pieces. In a mixing bowl, combine shrimp with cucumber, green onion, and dressing. Toss gently to coat.
