- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- ⅓ cup mayonnaise
- ⅓ cup sour cream
- 1 large lime (zested and juiced)
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove (minced)
Instructions
- Make the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper until smooth. Chill if desired.
- Boil water in a large pot. Add shrimp and cook for 2-3 minutes until pink.
- Prepare an ice water bath while shrimp cooks. Transfer cooked shrimp to the bath for 3 minutes to cool before draining.
- Chop cooled shrimp into bite-sized pieces. In a mixing bowl, combine shrimp with cucumber, green onion, and dressing. Toss gently to coat.
